Ingredients: (6 cupcakes)
Bake for 18mins @ 160 degree C/ 325 degree F
For the cupcakes:
2 tbsp unsalted Butter, at room temperature
5 tbsp Sugar
1 egg
1 tsp Vanilla Extract
3/4 cups Self Raising Flour, sifted (or all purpose flour + 1/2 tsp baking powder + 1/4 salt)
1 tbsp Cocoa Powder, sifted
1 tsp no-taste Red Food Coloring
4 tbsp Milk (or buttermilk)
1/2 tsp Baking Soda
1/2 tsp Vinegar (or lemon juice)
For the cream cheese frosting:
120g Cream Cheese, at room temperature
4 Tbsp Confectioners' sugar
1/4 tsp Vanilla Extract
2 tbsp Thick Cream/ Double Cream (35-40% butterfat) (or butter)
